Carrot cake with cheese frosting

The cake, cake or carrot cake originates from the Middle Ages, a time when sweeteners were scarce. This cake became popular in the UK during World War II due to food shortages, and was available in American restaurants and cafes in the early 1960s.

Ingredients for carrot cake with cheese frosting

For the cake

  • 2 cups of wheat flour or almond flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of sodium bicarbonate
  • ½ cup of white sugar
  • ½ cup brown sugar
  • ½ teaspoon of salt
  • ½ teaspoon of cinnamon powder
  • 5 large carrots
  • 100 gr of crushed walnuts
  • 2 large eggs
  • 3⁄4 cup of sunflower oil
  • 2 teaspoons of vanilla extract
  • 50 grs. of brown or blonde raisins

For cheese frosting

  • 250 gr of cream cheese
  • 50 gr of butter without salt
  • 1 teaspoon of vanilla extract
  • 125 gr of powdered sugar or nevazúcar
  • 150 gr of walnuts, filleted almonds or peanuts without salt

Preparation of carrot cake with cheese frosting

For the cake

  1. We put the dry ingredients in a container, that is, we mix the flour, the baking powder, the baking soda, the white and brown sugar, the salt, the cinnamon, sift, add the raisins and reserve.
  2. Now we take the carrot, peel it and grate it with the help of a roller.
  3. We add the crushed walnuts, mix and reserve.
  4. In another container, we whipped the eggs with the sunflower oil until thickened and added a teaspoon of vanilla.
  5. To this mixture we add the carrot together with the walnuts, integrate and add half of the dry mix. We alternate both mixtures until we finish, trying to integrate very well.
  6. We take a mold, add a little butter and flour. Let’s pour the mixture and take it to a preheated oven at 180 ° C for 50 minutes.

For cheese frosting

  1. We put the cream cheese next to the butter and mix very well until they are perfectly integrated.
  2. We add the powdered sugar, the vanilla extract and mix very well until we get a uniform mixture.

For the armed

  • We remove the cake from the oven and let cool.
  • Once cold, cut the cake in half and fill with a little frosting, add a little chopped walnuts and raisins.
  • We put the other layer of cake and add a little frosting on the surface. We decorate with a little nuts and raisins.
